You can use a variety of vegetables, be sure to use potato. Boil all the vegetables together. I pressure cooked them.
While the veggies are boiling. Heat pan with oil, add mustard seeds, cumin seeds, green chillies and ginger garlic paste.
After a minute add in onions and sauté.
Add some salt.
After the onions turn translucent, add in tomatoes and cook till mushy.
Add in the spices- red chilli powder, cumin powder, turmeric, coriander powder and dry mango powder. TIP: Can substitute these with pav bhaji masala available in Indian grocery stores.
Lightly mash all the boiled vegetables. Don't squish them too much, you should be able to feel the veggies.
Add the boiled veggies to the onion and tomato mixture on the stove.
Mix well, after its fully incorporated, remove from heat and squeeze in fresh lemons
Serve hot with butter toasted bread/bun (Pav). Sprinkle some chopped raw onions and cilantro on the vegetable mixture (Bhaji). Enjoy!!
