Buy a pasta machine, rolling pin or anything that would roll a piece of dough.
Some flour "00". Use regular one if you can't find this one.
Wash your hands
That will get you 3-4 portions.. Or less if it turns out well..
Leave some in the bowl. It's better to add it later if the dough needs it. Don't worry about sifting the flour. The amount you use will also depend on the size of the eggs

Add the eggs
A little bit of olive oil
When it's nice and creamy
Get a scraper
Time to use your hands.
Make a little ball
Wash your hands again
If the dough is sticky.
Add from the flour left in the bowl
a little bit at a time
Dust the plate with flour and put the dough on it
Cover and let it rest for at least 30 minutes
It will look like the gym with a glass door in the winter
Then you know it's ready
Get your machine ready... Or rolling pin.
Spread the dough. If its bigger just cut in half. You want to do small batches at the time

If its too big cut in half
Dust with a little bit of flour.
Add flour as needed
Keep on rolling
Until you think it's thin enough
Slice a bit
Check the thickness
If its too big cut in half
Dry it before cutting into shapes. If you are making ravioli you want to skip the drying part.
Put on your cutting board.
Trim the dryer brittle pieces.
Open it
Hand cut pasta
Put it over parchment paper to dry a bit more
Get some salted water going
Mince some garlic
Sizzle it with some olive oil
Pour over a bowl
With some salt and parmesan
Grab some pasta
Add it to the boiling water
Cooks very quickly. About four minutes, depending on the thickness.
Drain
Add the pasta to the bowl
Some parsley and pepper and you are good to go.
