Preheat oven to 400 degrees F.
In a food processor, combine all the ingredients except the poppy seeds. Pulse for 10 to 15 seconds or until batter is smooth, then pour into a mixing bowl.
This is where I make any adjustments. I like my bread to be more lemony, so I added more lemon juice. Just go by your preference.
Mix in the poppy seeds. The batter will be thick.
Scoop into the bread pan, or pans, and smooth out the top the best you can.
Bake for 20 to 25 minutes or until toothpick comes out clean.
Let cool for 15 minutes, then turn out on to cooling rack.
Serve plain or with your favorite jam. Enjoy!

- 6.0 Eggs
- 1/2 Butter, softened (not melted)
- 1/4c Lemon juice
- 1/4c Xylitol
- 1.0tsp Baking powder
- 1/2tsp Salt
- 4.0tsp Poppy seeds
