INGREDIENTS
Soak your noodles in hot tap water for at least 30 minutes and until they're al-dente (firm). Only when they are done should you begin to cook anything else n
I'm using chicken, you can use anything. I recommend tofu or shrimp. Or just leave it veggie!
Get your wok nice and hot.
While the chicken/protein cooks, you can prep your veggies and clean your cooking area.
Once your chicken is cooked, add your beat eggs. Don't scramble them up, rather let it cook like an omelette. Once the bottom is cooked, flip it and mix it with the chicken.
Mix in ONLY your carrots. Then add the noodles!
Add the rest of the Pad Thai sauce and cover for 2 minutes so the noodles can get cooked fully.
Now, reduce heat down to low. Add the bean sprouts and green onion. Do not let them touch the wok, just set them in the middle and fold them in so they steam. This will prevent them from cooking down.
Take off heat and cover for another 2 minutes
Plate and enjoy! I added a few fresh green onion and sprouts. Also, of course some siracha ;) enjoy! You can make your own sauce, didn't have the ingredients. It's tamarind based and it's really good!
- 2.0c Rice Noodles
- 1.0c Protein of your choice
- 1.0c Green onion. Chopped
- 1.0c Bean sprouts
- 2.0 Eggs
- 1.0c Pad Thai sauce
- 1/2c Chopped Peanuts
