Cut your potatoes into your desired shapes.
Next, boil a pot of water for the potatoes. Your gonna blanch the potatoes into the hot water for only about 4-5 minutes.
Add your potatoes to the hot boiling water and blanch.
In a separate bowl, grate Parmesan cheese. Set aside.
Scatter out your choice of any herbs over your sheet pan.
When your potatoes are done blanching, drain immediately. You want the potato to slightly bend.
Add your fries to the herb mixture on the sheet pan.
Drizzle a good amount of olive oil.
Season your fries with salt and pepper.
Preheat your oven to broil.
Once the oven is hot, add the fries to the oven to roast.
Cook the fries into the oven for about 10 minutes or until golden brown and crispy. Make sure to check every so often so the fries do not burn.
Lastly, add your freshly grated Parmesan cheese to the fries at the very end.
