INGREDIENTS
Wash, pat dry and cut 1lb of potatoes into wedges. Meanwhile, preheat the oven to 425F
Drizzled 4 tsp of extra virgin olive oil, 1/4 cup of chopped fresh dill and 1/4 tsp of salt. Tossed or simply mix with your hand. Note: I put more dill coz I love fresh dill :)
Line the potatoes on foil, or you can line them straight on baking sheet which has been sprayed with non stick spray
Baked on lower rack, turning every 10 mnts for 30-35 mnts or until golden brown
Put 2 cups of cornflakes in ziplock bag and manually crushed the cornflakes. Set aside
In a shallow dish, add 1/2 cup of flour, 1/2 tsp of salt and the white pepper. Taste test. Add more salt or pepper according to your liking. You can subtitute it with store bought seasoning
Prepare egg whites from 2 eggs
Take 1 slice of fillet. Dredge it in the flour
Dredge in the egg whites
Fully coated the fish fillet with crushed cornflakes
Line on foils or you can line them straight on baking sheet which has been sprayed with non stick spray
Baked on the upper rack until opaque in the center and the cornflakes golden brown and crisp, about 20 mnts.

Transfer to a serving plate and garnish with some fresh dill :) enjoy the fish and chips with malt vinegar, tzatziki, homemade tomato sauce or enjoy it as it is :) hope you like it. enjoy!
- 1.0lb Cod fillet
- 1.0lb Russet potatoes
- 2.0c cornflakes
- 1/2c all purpose flour
- 2.0tsp salt
- 3/4tsp salt
- 1/2tsp white pepper
