Our beef shanks from the butcher
This is called silver skin, do your best to remove it
All clean
Our Ingredients
What we are using for our bouquet Garni, aka our spices
Put them all in cheesecloth then tie with kitchen twine, put off to the side
Now tie your beef shanks so they meat stays together
Heat up the oil to the point of smoke
Our veggies need to be diced
Coat beef shanks with flour and salt/pepper
Sear in the hot oil about 3 minutes each
Flip
Take off the stove for now
Cook your veggies til translucent
All done
Add your tomato paste
Mix thouroughly
Add the shanks over the veggies
1 1/2 cups of white wine
Slimmer down the liquid by half
Add your bouquet Garni and chicken stock
Let simmer for 3 hours then remove bouquet Garni and serve
I put mine over mushroom risotto and grilled romaine

- Olive oil
- 1/2c White wine
- Sprig of rosemary
- Sprigs of thyme
- 4 cloves
- 1 bay leaf
- 1.0 Diced Carrot
- 1.0 Diced Celery Stalk

- 3.0c Chicken stock
- 1.0Tbsp Tomato paste
- 3.0Tbsp Parsley
- Lemon Zest
