How to make orange-oatmeal pancakes
Throw together some banana-oatmeal pancakes and start your day right.

I'm going to use a blender to speed up the process. All ingredients are approximate. This recipe makes four medium-sized pancakes.

First, pour in the oil. I'm using sunflower oil.

Add the banana.

Next, pour in the orange juice and add the eggs. You can also substitute soy milk for the orange juice or go traditional with milk.

Next add the flour. You can use white flour or whole wheat. I usually use a mixture of the two.

Add cinnamon to taste. Nutmeg or cardamom are other possibilities.

Add a heaping teaspoon of baking powder.

Then add the oatmeal. Cooked oatmeal also works fine and gives a different texture.

It' time to blend the ingredients together. Be careful not to over-blend. Mix in a few short bursts and finish folding the ingredients together with a spatula.

Add flour or liquid if the batter is too thick or too thin At this point you could also add some nuts and dried fruit. Cranberries and pecans are a worthy addition.

Add a little oil to a frying pan. I suspect that the pancakes would cook just fine without the oil.

Pour in the desired amout of batter and shape with the spatula if necessary.

Turn when bubbles appear and the edges become dry.

Serve with yogurt and your choice of maple syrup, honey, or jam.

Fruit and nuts are optional. Enjoy!
- 2.0 Eggs
- 1/4c Flour
- 1/4c Oatmeal
- 1.0 Banana
- 1/2tsp Baking Powder
- 1/2pch Salt
- 1.0Tbsp Oil
- 1.0c Orange juice
