INGREDIENTS
In a food processor, add a sleeve of graham crackers
And 1/4 c sugar. Pulse to pulverize and completely blend
Once it resembles crumbles add your butter
5 TB melted butter, pulse to blend
In a 9x13, press crumbs into bottom. I don't like pushing up on the sides so I only use for bottom layer. It should be a wet crumble so it will press in well
Bake at 325, for about 10 minutes. Let cool while you make the filling
In a mixer attached with wire whisk, blend two bricks of room temp cream cheese
Add 1/2 cup sugar and beat well getting rid of any lumps of cream cheese
Add four eggs and blend well
Next 1 TB fresh lemon juice and a tsp of vanilla
Mix this until its light and fluffy. About five minutes in high
Spread into the dish and bake about 20-25 minutes
Once it's set (but still a little jiggly) it's ready. Let this cool slightly before adding sour cream layer. I let mine cool about 20 minutes
Sour cream topping: 1 c sour cream, 4 TB sugar and a tsp of vanilla
Blend well and dollop on top the cream cheese mixture
Spread across top of cheesecake and bake another 10 minutes.
Once finished baking, I let mine cool sitting on counter top and cut while room temp. Then I place in fridge until chilled and ready to eat
Add some strawberries and enjoy
