Cut okra's to long slits.
Shallow fry them in batches. Add very little turmeric and salt. We will add salt finally to the curry.
Transfer the lot to paper towel to strain.
Purée tomato, green chillies, , garlic, cumin and coriander seeds.
Heat oil in the same pan you used to fry okra's. Splutter some cumin seeds. Add the tomato purée and cook.
Add salt when half cooked. You may also add some turmeric powder.
Cook until paste thickens.
Add fried bhindi to the paste.
The tangy Indian Bhindi chatpati is ready to be served with Indian Roti's.
