preheat oven to 350F

Sift flour, baking soda and salt 3 times, then set aside

Cream shortening and sugars in a mixer for 10 minutes

Add egg and vanilla extract

Add the dry ingredients (flour, baking powder, baking soda and salt) at a low speed

Fold oats and nuts (optional) manually

Place on ungreased cookie sheet, bake for 10-15 minutes

Voila! A delicious yet simple Oatmeal Cookie. Enjoy! ^.^
