Gather all your ingredients.
Preheat your oven to 350*F. This is if you want your oats toasted. I find the heated oats help bind everything together better.
This should only take about 10mins or so. I like to see some colour on them before I take them out.
Chop up the nuts in a food processor. I just chopped the cashews and pistachios.
Chop until you get the consistency of your choice. I like to have some chunky bits. This looks good.
Now place the chopped nuts into a bowl.
Now place the sunflower and flax seed into bowl.
Place the dates in the food processor and pulse until finely chopped.
When it's chopped enough it will form a ball. Place in bowl with the nuts.
Now in a sauce pan, place the peanut butter, honey and maple syrup. Heat up on a low setting. We just want to heat it up not boil it.
Once heated up and mixed well, it's ready to add to the bowl.
The oats are done and looking good.
Add the warm oats to the bowl.
And add the honey mix to the bowl.
Mix well so everything is coated.
Get a pan to put the mix in. I lined the pan with parchment paper so I can get it out without sticking.
Place the mix in pan.
Flatten down the mix. Try to evenly spread the mix while flattening. Place in refrigerator to cool down. About 60mins should be enough time to cool.
Once cooled, cut into desired sizes. Using an 8x8 pan I get 12 bars about 1/2" thick.
