Preheat oven to 350*F. In a small bowl, combine oats and baking soda- set aside.

To a medium bowl, whisk together the peanut butter, eggs, brown sugar, and vanilla extract until complete smooth.

Once smooth, add the oats/baking soda and mix until evenly combined. Stir in optional chocolate chips.

Spoon dough onto parchment lined cookie sheet and bake in preheated oven for 9-11 minutes or until sides are slightly browned.

Remove from oven and let cool on cookie sheet for 10 minutes, then transfer to a cooling rack for the remainder of the time.
