Make Mushroom Barley Soup


Sauté onion, garlic and celery in the oil or butter until the kitchen smells fabulous, usually when the onions turn clear. Toss in the mushrooms and cook thoroughly.

While sautéing, pour your broth into a crockpot. Add all the other ingredients. Add only about a cup of dry barley. Remember, it grows!!

After at least an hour of cooking, covered, start tasting and add salt, pepper and garlic salt to taste. Ridiculously simple and yummy!

  • Mushrooms, a variety sliced
  • Barley, uncooked
  • Broth: beef, chicken or vegetable
  • Carrot, shredded
  • Celery, sliced very thin
  • Garlic, chopped or Garlic Salt
  • Salt
  • Pepper
  • Water
  • Olive oil or butter
