How to make moose bolognese

Before any Italians lose it; I know this isn't a REAL bolognese. But it's inspired by one. And it tastes really good too.

As is turns out my piece of celery root wasn't celery root, it was turnip. It gave the dish a rather different flavor than celery would have done but since the idea was to use stuff we had at home...
