How to make momma's homemade southern biscuits
Making biscuits homemade costs me $0.13, when a "can" of biscuits cost $0.99 on sale. Now that's a bargain!

STEPS
INGREDIENTS
Preheat oven to 450 degrees.
Cut stick of butter in half. Use one of the halves to melt in pan(s).
Preheat pan(s) in oven with butter.
Start with 2 cups self rising flour.
Cube up the other half stick of butter.
Add to flour. You could use 1/4 cup of any solid fat, like Crisco, lard, or coconut oil solid..but I like the butter.
Get your hands in it. See the butter cube? Get between fingers and mix with flour.
See how it's flattened?
Mix with the flour. It's like when you was a kids, squeezing sand and water in your hands.
See how there is only small lumps? That's the butter. Now, push the mix up to side of bowl to make a well.
Add 1 cup milk, cream, evaporated milk, or buttermilk.
See its in the well. Now, grab a fork.
Start stirring in the middle, adding more and more flour as you mix it.
Stir..mix ...
Stir..mix...
See how it's forming? ...stir...mix ...
Almost got it...stir...
Make sure all dry ingredients are now wet...and sticky.
I use my cutting board. Easier to clean. My husband uses wax paper.
Add enough all purpose flour to dust top of board.
Helps the sticky dough more manageable.
Plop that sticky goodness on the floured board.
Sprinkle enough of all purpose flour on top to keep your hands from sticking to dough.
Just start mashing dough down to desired thickness.
Mash it to the left side...
And to the right side...
See the edges are irregular in shape?
I like to round the edges up.
I like the thickness about a nail bed to first knuckle tall. But you can make them taller. ⬆
Pull out heated pans.
Flour your biscuit cutter. I've been known to just use a glass.
Cut straight down, come straight up, helps edges look better.
All cut.
Pick up ..easy..remember just sticky dough inside.
Dip one side in butter.
Flip and set to side.
This pan's full.
Now just gather the "scraps" to middle of board.
Take one side..
And flip on itself.
Do again..
Till no more holes.
No holes..only 2 flips. Now turn dough over.
Now mash down again.
Same as before.
Cut.
Flip in butter. Pop in oven for about 15 min. till golden brown.
Yep..golden brown.
Goes great with gravy, country fried potatoes, bacon and sausage.
For leftover biscuits, place in Ziploc baggie, put in freezer for long term or refrigerator for short term. My youngest son sneaks and eats these out of the fridge like kids grab a cookie.
- 2.0c Self Rising Flour
- 1.0 Stick of butter
- 1.0c Milk
- 1/4c All purpose Flour
