Gather your ingredients.
Blanch your Brussels sprouts for 30 seconds and shock in an ice bath.
Make miso glaze: add orange juice and a tablespoon of water to your miso paste.
Puree until you have consistency of thick batter.
Dice up smoked tofu (or any smoked protein)
Take your blanched brussels sprouts and sear them face down in a hot pan for 1-3 minutes, until browned.
Like this.
Now that they're browned, add the miso glaze, pickled peppers, garlic, and tofu. Saute for another minute, until the miso thickens up and the garlic is fragrant.
Plate and serve!
- Juice of 2 oranges
- 0.0c White or chickpea miso
- 4.0c Halved, blanched Brussels sprouts
- 4.0 Cloves garlic, thinly sliced
- 0.0c Diced smoked tofu
- 0.0c Pickled chiles
- Salt to taste
- Pepper to taste
