INGREDIENTS
Gather your ingredients and preheat your oven to 375.
Crumble and brown your ground beef in a large pan over medium-high heat.
Drain the grease and stir in your taco seasoning.
Drain and rinse your black beans and add them to your pan.
Add your 2/3 cup of water. Bring mixture to a boil and then reduce the heat to low, simmering for about 10 minutes.
Spray your muffin pan with a non-stick cooking spray.
Place a wonton wrapper in each muffin cup.
Place a small tablespoon of the meat mixture in each muffin cup.
Sprinkle the top with cheese.
Layer another wonton wrapper over the mixture and repeat the layer of meat + cheese.
Bake for 15-18 minutes or until the cheese is bubbling and the wonton wrappers have turned golden brown.
Let cool for 5 minutes before serving.
Serve with your favorite taco toppings. We served ours with salsa, a dollop of sour cream and a sprig of cilantro!
