Season and sear the pork
Cook down the onions. Add wine and stock, reduce to almost dry
Add sage, thyme, lemon and milk. Bring to a simmer.
Place into alto-shaam cook & hold. Cook at 300f for 3 hours and hold at 160f.
When it’s done cooking
Add the milk broth to the vita mix and blend.
Add back to the pan and reduce to desired flavor and thickness
