How to make melt in your mouth pumpkin cookies

As much as I love summertime, when October rolls around and all the leafs start to change I get a crazy craving for pumpkin! And these moist cookies!! They have to be the BEST cookie I've ever had!!

Okay, before I get started I want to say this recipe is going to make A LOT of cookies (60 to be exact). You can either half the recipe or freeze some of the cookies. I personally freeze some :)

Preheat oven to 350 degrees :)!

Okay let's get started, bring butter to room temperature. In a LARGE bowl beat butter with electric mixer on medium for about 45 seconds.

Add sugar, baking powder,baking soda,salt,the 1 teaspoon cinnamon,and the nutmeg. Beat until combined.

Beat in the eggs and 2 teaspoons of vanilla until combined.

Beat in pumpkin until well combined :)!

And last but not least beat in the first two cups of flour, then once well combined mix in the final two cups.

Your mixture should look like this! The full recipe will make about 60 small cookies.

Drop dough by the tablespoon two inches apart on an ungreased  sheet. Bake for 12-13 minutes :)

Now, you must know that whatever shape you drop the dough into with be the shape that the cookie will come out. The cookie does spread a little but not much.

Once the cookies are done place on a cooking rack.

Now! I will say this the cookies themselves are delicious so really you don't need the frosting but I think it takes the cookie to a whole other level :D So really the frosting is up to you!

But, if you do want the frosting this is how to do it! :) In a small sauce pan combine 1/2 cup of butter and 1/2 cup of brown sugar. Place on medium heat and stir until smooth.

The mixture should be thick enough to spread but thin enough to easily move around. Once you achieve desired thickness spread evenly onto cooled cookies. Sprinkle with cinnamon and you're done! :D

And yes, these pumpkin cookies are so soft that they will sort of melt in your mouth!! :D
