Cut skin off eggplant and make in slices
Fry in hot oil till they get brown
Put on white paper towl to drain excess oil
Put on bottom of pan a slice of eggplant
Add tomato sauce
Add Mozzarella in pieces
A few leaves of basil
A layer of parmesan cheese
Continue making layers till you arrive to the top and sprinkle a last layer of parmesan cheese
Cook in oven at 180 degrees till top gets brown about 20 minutes
Add a leaf of basil for decoration
