With four cups of fresh spinach...(you can use less)
Half onion and clove of garlic....
In food processor, first blend onion and garlic then add spinach.
Squeeze out liquid over sink. Try not to lose too much spinach in the process. It's ok if it's a little wet.
Put two large chicken breasts or 3 small ones in the food processor. Pulse until minced.
Like this.
Put chicken in the bowl with spinach mixture. Add 1/4 cup feta, 1/4 cup Parmesan
Add chopped thyme and italian parsley.
Add one egg white and 1/2 cup of Panko bread crumbs.
Mix with your best mixer...your hands!
Sauté in coconut, olive or canola oil. 3 minutes each side.
Bake in the oven for 10 minutes on 375.
