Whip the egg whites and creme of tarter on medium speed till it reaches soft peaks.
Mix together your sugar, syrup, salt, and water in a pot on medium heat. Once it’s thoroughly incorporated, drop in the thermometer and continually stir. Temp should read 240.
Carefully drizzle the sugar into the egg whites. When all the sugar is in, you should notice a big difference in volume. At this point you can splash in the vanilla.
