Preheat your oven to 300 degrees F
Gather your ingredients
Mix all your dry (except sugar and salt)
Measure out 1/4 cup coconut oil. It's solid at room temp so use a spoon and pack it in. Coconut oil will inject the granola with even more delicious coconutty flavor.
Heat the coconut oil for 20 seconds to melt
Nice and melted
Stir together your sugar, salt, and oil until evenly incorporated
Mix your wet with your dry and massage until evenly distributed, about 2 minutes.
Divide among two parchment-lined cookie sheets. Spread into even layers.
Place in your 300 degree oven making sure there's room for air circulation for an even bake. Stir every 15 minutes, until golden brown. About 45-60 min
This is the golden brown you're looking for. Note the color of the coconut. Any longer and it would have started to burn. This, however, tasted nutty and delicious.
Once it's out of the oven, add in the dried cranberries and stir until even. That's it!
Serve with plain European style yogurt, sliced bananas, berries, a drizzle of honey, and a sprig of mint.
