How to make mango and maple syrup pancakes

Add the wet ingredients to the dry, then gently whisk them together until you can no longer see any flour. For tender pancakes, leave a few lumps- you're not aiming for a smooth and silky batter!

Put a decent sized non-stick pan on a medium-high heat and let the surface get hot. It's hot enough when droplets of water will evaporate off of the surface.

Moisten a paper towel with oil and wipe the bottom of the pan- this will prevent the pancakes from sticking. Then ladle a good dollop of mix into the hot pan, spreading it out to a rough circle shape!

After a little while, bubbles will form in the batter. When they start to pop, flip the pancake gently using a spatula (sorry, no elaborate flipping necessary here!!).

When each pancake is done, I recommend keeping them in a warm oven whilst you cook the rest- this will keep them nice and warm and cosy until you're ready to eat them!
