Here's what you need.
Add flour to bowl.
Toss in the baking soda and mix it all together.
Sift the flour and baking soda mixture into another bowl and set aside.
Get your onion, sugar, dill weed, salt and yeast ready. You will also need a thermometer. You can even use a digital thermometer so long as it hasn't been in a baby's butt. Or any butt!
Beat you egg and set aside.
Add you cottage cheese to small pot, turn heat to low. Allow the cheese to slowly heat to 110 degrees. Close attention in this step is crucial. If it gets too hot, set aside and let cool.
Be ready to act quick when cheese reaches 110 degrees. Have everything prepped, including the warm water.
After cheese reaches 110 degrees, turn off heat, add the butter.
Add the sugar.
Add the onion.
Add the salt.
Add the dill.
Add the WARM water.
Add the egg.
Add the yeast LAST.
Mix the cheese mixture until ingredients melt together and then add it to the flour mixture.
Mix it together. It will get sticky. It doesn't have to be really well mixed because you will knead it next.
Get 1/2 cup of flour, sprinkle some of it on dough board. Then place dough mixture on top of flour.
Begin kneading flour into dough until it holds together. I am using my fist but if it gets too sticky, use your palms.
It will look like this.
Spray a loaf pan with cooking spray, or oil it with butter.
Form dough into a loaf, place it in the loaf pan.
Place a towel over dough. Set it in a warm place and let rise until it doubles in size. This will take 1-1.5 hours.
You can go ahead and preheat oven to 350 degrees.
After it has doubled in size, mash the dough down until it is more dense and most of the air has been pushed out of it. It should reduce to 1/2 it's size.
Pour some olive oil on top of dough and brush it over the top of the loaf. I just use my fingers.
Bake at 350 degrees for 35-40 minutes-- until top is brown.
Umm, it smells so good!
After 10-15 minutes, remove from loaf pan. It should be ready to cut, butter and serve! It is great as a dinner side or just by itself!

- 1.0Tbsp Butter

- 1.0 Well beaten egg
