How to make lumpia/spring roll wrappers

Recipe adapted from cafenilson.com. You may be a whiz at these immediately, but it took me some practice. My wrappers aren't the prettiest, but they do the job. :) happy cooking!

You're going for the consistency of super runny pancake batter. You may need more or less water than I use, you'll have to play around with it.

A pan with a good non stick surface is key! You want to avoid using any grease or oil if possible. Heat to med/med-high, and use a pastry brush to quickly brush a thin layer of batter in the pan.

As soon as it sets (almost immediately) quickly brush a second layer of batter. If you make a mess, don't get discouraged! It took me until my third batch to even be able to make *this* mess. :)

When the edges start to lift, and you don't see any wet batter spots in the middle - it's done! Lift out with a spatula & place on a plate. Keep covered with a damp towel while you make the rest.

When they're cool, you can place wax paper between each & freeze them! I like to make a HUGE batch of batter so that I don't have to do it often. Enjoy! And please share any tips you may have!
