Let's start by melting some cheese. 15/20 seconds at a time microwave the cheese. Stir between cooking times
This is what your looking for.
Now spread it out and add the Goat Cheese. Sure, you can substitute Cream Cheese. I guess.
Fold the mozzarella cheese over the goat cheese.
Microwave for another 15/20 seconds.
You'll want to do all the mixing with a stiff spoon.
Mash the two cheeses together.
Add the remaining ingredients. Now the really hard work begins. You're going to mash and fold for about two minutes. Two, long, minutes.
Now if you're going to make a single large pizza crust, just cover and refrigerate for 30 minutes.
I divide the dough into 5 balls. I'll be having low carb pizza for lunch this week! Cover and refrigerate for 30 minutes.
Large or small, I use a silicon mat, parchment paper and a rolling pin.
Roughly flatten it out by hand.
Lay the parchment paper on top and roll it out. Keep changing directions to keep it round-ish.
Pinch together the cracks that appear on the edges.
Perfect circle! Yeah, I cheated.
My OCD abhors artisan shaped pizza. I got this on Amazon.
I take the scraps and press them back into the middle.
Dock the dough to prevent bubbles when cooking.
Now you can cook these in the oven @ 350 until they crisp up, oooorrrrr... Put a little oil in a fry pan set at the high side of medium.
Drop the crust in the pan once the oil is hot. Keep it moving for the first few seconds to prevent sticking.
Move the crusts to a cooling rack. If you're not going to use them right away, freeze them between sheets of parchment in a freezer bag.

And the cheese of your choice.
A couple of minutes under the broiler and lunch is ready! I wrap these individually and freeze.
Reheat in a toaster oven for best texture.

- 1.0Tbsp Goat Cheese (or sub cream cheese)
- 2.0Tbsp Parmesan Cheese, grated
- 3/4c Almond Flour (or sub coconut flour)
- 1.0 Egg
- 1.0Tbsp Italian Seasoning
- 1/2tsp Salt
