How to make "lomo enchipotlado" or chipotle style pork

This is one of my favorite childhood dishes, it is tasty, spicy and easy to make. You only need 5 ingredients including Chipotle Chilies and Coca-Cola... Yes Coke, believe me it works!

Only 5 ingredients! I use recipes as guides so you can tweak the quantities according to your tastes, specially when using chilies. This recipe will be spicy so just use less chilies if preferred.

You need  "Chipotles Adobados". Any Chipotle that comes in a can is suitable, make sure they are made in Mexico. Chipotle is becoming a popular spice around the world, you should be able to find them.

NOTE: Chipotles are smoked dried JalapeƱo Chilies widely used in Mexico. You can buy the dried chilies or prepared in "Adobo" sold in cans, these are the ones you want, they are ready to eat.

In a pestle & mortar grind 3 cloves of garlic  and half an onion with plenty of salt and pepper (enough to season the Pork). TIP: the salt will help as an abrasive when grinding.

TIP: Use a "Molcajete" (Mexican pestle & mortar) it is made of a porous volcanic stone and makes grinding very easy. I don't have one so I actually grate the onion with a grater before grinding

You should have enough marinade to cover the Pork Loin. Cover and let sit in the fridge for 20 minutes or an hour.

In a blender place the chipotles, one clove of garlic, 1/4 to 1/2 onion and the coke, blend on high. Don't worry about the seeds as we will strain the sauce at a later step.

Heat a pan to sear the pork. Make sure the pan is very hot, also brush off the marinade so it doesn't burn in the pan but reserve. Searing the meat will only take about a minute or two. Sear all sides

Place the pork into a snug-fitting roasting tray along with the reserved marinade. Pour the Coke and Chipotle sauce into the tray NOTE: the sauce should almost cover the pork around 3/4 up.

Place in a 180c oven and cook for 35 min. Cooking times will vary depending on the size of the Pork. Take the Pork out of the oven 5 minutes before completely done, it will go back in before serving.

The U.S. Department of Agriculture recommends roasting pork to an internal temperature of 145f /63c and let it rest for 3 min. A good guide is to cook it for 22-25 min per each 0.5 kg at 180c / 350f

Pass the sauce through a sieve and simmer for 15-20 min to reduce and thicken the sauce. OPTIONAL: put a nub of butter to make the sauce more silky.

While sauce is reducing, slice the pork loin in 1cm medallions and place back into the roasting tray. Once sauce has reduced add back into to the Pork.

Roast in hot oven 220c / 430f for a further 5 -10 minutes or until slightly brown.

Plate pork with some potatoes and the sauce on the side, you should have plenty of sauce for everyone to drown their pork. IMPORTANT: Serve with soft corn tortillas and avocado. Enjoy!

You can also make sandwiches using crusty bread, Mexican refried beans and avocado. I always make much more Pork than what I need so I can have a sandwich the next day using the left overs.
