Make sure you have everything ready ahead of time, including lollipop sticks, a greased lollipop mold, and hopefully a Silpat for any extra candy.
Measure all items out!
Using a candy thermometer or digital temperature gun ($25 on Amazon) bring the water, corn syrup, and sugar to 295 degrees F.
Remove from the heat and add flavoring extract/oil and any food coloring. Note: Vanilla extract won't retain the flavor like proper candy extracts!
Pour into lollipop molds. *Note that clear chocolate molds will MELT. Use the opaque molds for hot sugar.
The remainder can be poured on a Silpat and shaped or allowed to cool.

- 1/2c Corn syrup
