How to make lollipops and cracked glass candy

With the right tools, you can make any type of candy! We bring sugar to the hard-crack stage (295F) in order to create wonderful sweet treats.

Make sure you have everything ready ahead of time, including lollipop sticks, a greased lollipop mold, and hopefully a Silpat for any extra candy.

Using a candy thermometer or digital temperature gun ($25 on Amazon) bring the water, corn syrup, and sugar to 295 degrees F.

Remove from the heat and add flavoring extract/oil and any food coloring.  Note: Vanilla extract won't retain the flavor like proper candy extracts!

Pour into lollipop molds. *Note that clear chocolate molds will MELT.  Use the opaque molds for hot sugar.

The remainder can be poured on a Silpat and shaped or allowed to cool.
