DISCLAIMER: This recipe can be made dozens of ways, so don't limit yourself on my ingredients. Add black olives. Change the type of cheese. Be creative and make it your own! 😊

Preheat oven to low broil (500 degrees Fahrenheit).

Spread nacho chips across a platter that can go in the oven.

Add oil to a frying pan and heat on medium heat.

Add chicken and cook a few minutes.  Add salt and pepper if desired.

Slice pepper jack cheese into small chunks.

Place pan in oven for 1-2 minutes until cheese starts to melt. WATCH CAREFULLY so chips do not burn (or lower the oven temperature.)
