Sift almond flour

Catch lime

Add pinch of cream of tar tar in egg white

Beat until foamy

Slowly add sugar little at a time and beat until stiff

Add lime zest,

Add color

Fold in almond and powdersugar

Fold gently

Put in piping bag

Pipe out on parchment paper

Wait , let dry

Bake 350' f, 12 min.


Prepare lime curd

In double boiler, heat sugar, juice, butter, zest.

Add egg yolk. Stir for 15 min.

When become thick , take off and adjust color

Put in fridge to cool

When the body cool, peel off the paper

Apply filling
