Start with the zest of half a lime
Add three teaspoons of mint and one teaspoon of parsley
Add half a chopped red chilli
The juice of half a lime and a teaspoon of olive oil
Add salt and pepper
Fry some large prawns (preferably raw ones) in a little oil until they are just hot through. Don't do them for too long else they'll be tough. Add the dressing
Pour the prawns and dressing over your salad
