preheat your oven to 180c. Cream your butter and sugar until light and fluffy.
I use an electric whisk for all my mixing.
begin to add one egg then mix, then the next and add your vanilla in too! Mix until you start to see air bubbles incorporate in to the mix
Once smooth fold in the flour one third at a time. I also added baking powder.
until it looks something like this.
spoon in to muffin tins and bake for 15 minutes.
- 110.0g butter
- 110.0g caster sugar
- 2.0 free range eggs
- 110.0g self raising flour
- 1.0tsp vanilla extract
