INGREDIENTS
First ensure you have a secure chopping board and a sharp knife
At this point you can remove the wings and tips ( you can use these for stock )
Gently lift the skin from the muscle using your fingers
At this point you can remove the wishbone ( also use in stock)
Put half the lemon in the chicken
To make the lemon thyme butter strip the leaves from the thyme & chop with the lemon zest, mix with the butter and there you go, simple :)
Place 2/3 of the butter mix under the skin of the chicken & press it down gently, rub the remaining butter over the rest of the chicken
Place the chicken in the tray with the water & the wine and preheat the oven to 175c/gas mark 4.5
Season the chicken and place in the oven for 50 - 60 mins, for best results baste every 20 mins. When the juices run clear it's ready :)

- 1 1kg chicken
- 3 sprigs of thyme
- Zest & half of 1 lemon
- 200g of butter (soft)
- 200ml white wine
- 200ml water
- Salt & pepper
- Roasting tray
- Chopping/boning knife
