The mixture should now represent large breadcrumbs! 💕
Add the 50g of sugar and whisk/hand-stir the sugar in thouroughly! Zest the lemon and add to the mixture. Use the hand whisk to whisk it into a dough. If it is still to dry add some lemon juice! 💕
Squeeze the dough into a ball. Again if it will not hold, add more lemon juice! 💕
Wrap the dough in clingfilm and leave to set in the fridge! 💕
Preheat the oven to 180*c! 💕
We now move onto the mirangue...don't worry it's easy if you follow these easy steps! First seperate 3 eggs...I used an egg seperator, but you can just seperate them with the shells! 💕
This should leave just the egg whites in the mixing bowl! Be really careful to make sure that no yolk gets in, else the mirangue won't whip! 💕
Whisk untill there are no bubbles left, and it is stiffer! 💕
Lightly flour a clean surface and rolling pin! Any flour will do..but plain is preferable! 💕
Remove your dough from the fridge and roll out about 1.5cm thick. Cut into a circular shape. (Any shape will do but circuls look better!) 💕
Cut out as many as possible by re-rolling. Line your baking tray with some parchment paper...sprinkle a couple of drops of water on the tray to help the paper stick! Place the biscuits on the tray! 💕
Snip your piping back about 0.5cm from the bottom and fill with the mirangue. Squeeze to the bottom and pipe onto the biscuits in rings! 💕
Spread the biscuits about 1.5 inches apart (You may need a second tray!) and place in the oven for about 17 minuets untill golden and crispy! 💕
Remove from the oven and leave to stand for about 5 minuets. Remove from the baking tray and leave to stand on a cooling rack untill completely cool. (Room tempreture!) ENJOY! 💕
