Protect the base with a foil so as the water doesn't get in the cake. It will be cooked in (Bain marie) water bath

The base: biscuits of your choice 200g-250g and 80g butter+1tbsp of sugar. heat and...

Press the biscuits in the mould. Put the fridge. Or you could put it 5 mins to bake. The 1 TBsp of sugar helps to cement the crust. Then let to cool

  • 3.0 Eggs+ 2 egg yolks
  • 200.0g Double cream (20 cl)
  • 1.0 Lemon juice(50 g)
  • 1.0 Lemon zest
  • 250.0g Biscuits of your choice
  • 80.0g Butter
