INGREDIENTS
Considering size of jar, bring water to a boil add in sugar & stir until completely dissolved. Turn off flame and add in tea bags; allow to sit for at least 20 minutes.
Allow tea to cool to room temperature before proceeding. Pour tea into jar & uncover scoby (tutorial on how to mane scoby in previous tutorial).
Thoroughly wash & rinse hands with soap & water. Rinse again with apple cider vinegar, then another rinse to remove apple cider vinegar from hands.
Using hands, remove scoby from its jar & add into tea mix. Pour some of the fluid from the scoby into the tea mix & cover with fabric or paper towel. Tightly secure so no contaminants an penetrate.
Leave alone for 3-5 days depending on room temperature. To test remove cover and slip straw in along the side & once immersed stop exposed part with finger. Remove straw & release to taste.
You will see a baby scoby forming at the top of the tea mix as the mix ferments. It will begin clear & turn a creamy opaque when it's done forming.
The longer you leave it the more vinegary it becomes. Once it's reached desired taste remove both scoby's & return them to their jar. Next tutorial will be jaring & flavoring Kombucha!

- 1.0 Jar
- 1.0 Paper towel or piece of fabric
- 1.0 Rubber band/ string or like
- 2.0 bags of either Yerba Mate/ Green or black tea
- 2.0c Organic Sugar
- 1.0 Scoby (refer to previous guide for instructions)
- 2.0Tbsp Apple cider vinegar
