Grate carrots, add the sugar and let stand until sugar had melted and the carrots has rendered its juice
Put the carrots in a cooking pot, and cook on medium for 5 mins. Then on low until caramelized and dry.. Stirring occasionally
Add pine nuts and miskek(optional) or cardemom(also optional)
When dry add spices(if using) and transfer to a dish and leave until cold
When cold. You can make bites
And you can roll them in pistachios
Serve as sweet bites after meals or like s jam to spread on toast or pancakes
