Ingredients: amounts are estimated. This should be enough for 2 people. I pretty much eyeballed amounts. You can use any veggies you like, potatoes and carrots are essential.
This is the curry roux I used. This can be bought online or at any Asian grocery store. Makes making this so much quicker and more convenient.
Pour a sufficient amount of water into a pot, about 2.5 inches up pot. Add a few dashes of salt
About this much salt...
Cube potato. I only used half my potato.
Once water has boiled, add potatoes and...
...pasta at the same time.
Add some olive oil in to keep the pasta from sticking. Let pasta cook until al dente.
Water has reduced, pasta and potatoes are cooked.
Add those veggies and cover. Let the frozen veggies cook.
Add some water if needed
Take one curry roux cube from the box..
And break into smaller pieces.
Turn heat to low and add curry roux pieces in. Stir until the roux has dissolved.
Add another cube into the pot. Stir until those pieces have also dissolved. The pasta water will thicken, and turn into a sauce. Make sure all of the pasta and veggies are covered in this sauce.
