1 bunch of scallions/green onions - green part only. This is 5 individual scallions/green onions.
1/2 teaspoon of garlic - fresh or bottled.
This soy sauce has a nice blend of flavors and is not too salty.
1 tablespoon of soy sauce.
1/4 teaspoon of allspice.
1/4 teaspoon of ground ginger.
1/4 teaspoon of salt.
1/8 teaspoon of black pepper.
1 tablespoon of curry, or less if you wish. This curry is homemade so it's not a super fine powder.
1/4 teaspoon of nutmeg.
1/2 teaspoon of cinnamon.
1/4 teaspoon of thyme leaves.
1 tablespoon of white vinegar.
Juice of one regular orange. If you have a sour or bitter orange, omit the vinegar.
Add a habanero (above) or scotch bonnet pepper if you wish.
Blend and store in the fridge. When using, add at the end of the cooking cycle to keep the flavors fresh. It can also be used as a condiment on cooked items.
