In a mixing bowl, cream the sugar and butter until fluffy and light.
Beat eggs in mixer and then add to butter and sugar. Add in vanilla, lemon zest, and lemon juice. Mix and incorporate well.
Combine flour, all spices, baking powder, and salt.
Add flour mixture with batter alternately mixing in rum and port wines.
Fold in the chopped marinated fruit.
Your batter mixture should look simillar to this, if it was done correctly.
Prepare your pans (1 9inch pan or 2 spring pans) with parchment paper.
Fill pan(s) 3/4 of the way up.
Bake for one hour and 15 minutes until a toothpick or skewer stick comes out of the center of the cake clean.
