How to make indonesian fried noodle (bakmi goreng)
to make the fried noodles (bakmi goreng), the vegetables and proteins used are vary, but this combination is the best for my family :)

INGREDIENTS
Prepare your noodles. You can use any brand indeed, but I found egg-noodles is the best :)
Prepare 3 garlic cloves, 4 shallots and toasted candlenuts. Blend it in a mixer or finely crushed it using mortar and pestle. If you cant find any candlenuts, leave it :) your bakmi will still good
Thinly sliced the cabbage, about 1 cup. We usually use coysim (green mustard leaves) and some people also use thinly sliced carrots
Sliced 2 scallions. Leave it if you dont like the aroma :) and stay with the coysim :)
Prepare 2 eggs, medium size
Add in a pinch of salt, whisk it
One note, please add in 1/2 tsp of salt before blend the shallots, gatlics and candlenuts. The end result will look like this
Boil some water. Just enough to cook the noodles
Cook for about 2 minutes. Do not overcook, coz it will not look nice as bakmi goreng :)
I like my noodles 3/4 cook :) remove from heat and drain
Transfer to a bowl. Stirring constantly (slowly), add in 2 tbsp of dark soysauce (sweet), 1 tsp of salt, 1 tsp of white pepper and 1 tsp of granulated sugar. The taste should be a little bit sweet
Add in 1 tbsp of oil, peanut oil or olive oil would be fine. Keep on tasting. The amount of salt, sugar and pepper may vary for everyone's taste bud. Indeed, I add more sugar :) set aside when ready
Now make some scramble eggs with a little bit of oil. Set aside
Add in 1 tbsp of oil in a hot pan. Saute the shallots until fragrant
The cooking time will approx 2 minutes
Get ur shrimp. It would be the best if you marinate the shrimp with salt and white pepper, and put it in the fridge for about 30 mnts
Let the shrimp join the shallots mixture. Cook until the skin is turning orange. You can use diced chicken or sliced beef if you prefer
For those who loves spicy bakmi goreng, may add thinly sliced red peppers after the shrimp
Add in the cabbage. Cook for about 1 minute
Add in the bakmi (noodles). Cook for about 2 mnts. Add more salt/pepper if you like
Add in the sliced scallions. Gently Cook for 1 minute
Add in the scramble eggs. Give a stir, turn off the heat
Transfer to a serving plate or bowl. Hope you like it :) as much as I do :) enjoy
