INGREDIENTS
Empty three cans of garbanzo beans in a pot
Let sit on medium high heat for about 30 minutes
In the meantime peel the garlic, you will need about a dozen cloves
Squeeze 4 lemons, make sure to drain so no seeds or plump is left in juice
Then cover the pot and lower the heat for 10 more minutes
There should still be water left when done
Then in good processor grate the garlic
Then add the lemon juice
Next about 2 tsp of salt
Turn off heat and leave the pot on stove
Then add the garbanzo beans with as little of the water as possible
Once the garbanzo beans are incorporated
Then add the tahini
Add 4 1/2 to 5 table spoons depending on preference
Then add the water from cooking the garbanzo beans
At this point taste the hummus it may need more lemon juice or salt. In this case the garlic taste was too strong so I added both
Then pour into a serving dish
I like to leave done garbanzo beans aside to add on top
Optional: add a little parsley, cumin, and chili powder on top
The most important thing to add is the olive oil I like to smoother mine :)
