Prepare the chorizo by getting a bowl.
If you can buy minced chorizo you don't have to follow the next few steps.
Squeeze the sausages and put the meat into a bowl.
Mash the meat with a fork.
Get a chopping board and prepare the tomatoes and onion.
Slice the top off of both of the tomatoes.
Squeeze the juice and seeds out of the tomatoes and discard.
Chop the tomatoes into chunks.
Cut the onion into fine chunks.
Grate the cheese (unless it is already grated).
Start cooking the Chorizo.
Break the chorizo into small pieces and cook until brown.
place the meat into a bowl.
Cover with foil and put aside.
With the remaining oil start browning the onions.
Once brown, add the tomatoes
Add garlic.
Add chilli.
Add oregano.
Add Sugar.
Stir In.
Cover for 15 minutes.
Set a separate saucepan to high.
Add the beans
Add a pinch of salt.
After about a minute, mash the beans with a fork.
Put aside and cover with foil.
Once the salsa mix is done, place in a blender.
Mix until it is a chunky texture.
On high heat, place enough oil to cover the pan.
Place one of the Tortillas in the frying pan and fry for 1 minute on each side.
Place on towel and repeat with other tortillas. (I am using two tortillas, but you can use as many as you want).
Cut the avocado in half.
Slice the avocado.
Cut a lime in half.
Crack an egg on a flat surface. This will less likely break the yolk.
Start cooking the eggs sunny side up.
Sprinkle some cheese on top of the eggs.
Once the egg is ready, flip over.
Cook until the yolk has cooked through.
Place the tortillas onto a plate.
Place the eggs onto the tortillas.
Place the beans on top of the eggs.
Place the chorizo on top of the beans.
Place the avocado onto of the chorizo.
Drizzle the salsa on to the avocados.
Sprinkle the cheese on top.
Add a lime to the plate. When eating squeeze some of the lime juice over the dish.

- 2.0 Tomatoes, seeded and diced
