Make sure your sausage is thawed and ready to go!
Chop the onion into small pieces.
Chop the green pepper, then brown the sausage with the chopped onion and chopped peppers. Drain excess oil.
Slice the pepperoni into quarters, then add to the meat, onion, & pepper mixture.
Add spaghetti sauce, but... (See next step)
...only add enough sauce to coat the meat and other ingredients. You don't want it to be too soupy or your bread will just be soggy.
Open the mini subs, put on cookie sheet, add to 400 degree oven, and allow bread to toast. I took mine out after about 10 minutes. Will be slightly browned on edges.
Spoon a generous helping of the meat mixture into each of the buns. Pile the shredded mozzarella on top of that.
Put into the 400 degree oven and bake until cheese is melted and slightly browned. Took mine about 10 minutes.
Serve with a pickle if that's your thing. Enjoy!

- 1.0 Small white onion
