Combine almonds, rice, water, and cinnamon stick in a blender. Cover and refrigerate 10-12 hours.
Remove cinnamon stick and blend on high speed 3 minutes or until mixture is smooth. Add sugar, vanilla, and about 3 additional cups of water. Blend for an additional 1-2 minutes.
You may want to taste the mixture at this point and add additional sugar, vanilla, or water depending on desired flavor.
Strain mixture through a sieve. Chill and serve.
Note: the solids that remain after straining make a yummy crust for cheesecake. Simply grease a pie pan & press solids into pan. Bake at 350 for about 10 minutes & add your favorite cheesecake recipe.
