Start by placing a glass bottle in hot water. Bring water to boil and cook bottle for 25 minutes while preparing the hot sauce.
I used fresh Chocolate Habaneros for this hot sauce. You can also use yellow, orange or red Habaneros...
Remove stems from Habanero pods. Cut Habaneros in half and remove seeds and membranes.
Peel garlic and crush the chives with a heavy knife.
Next prepare a marinade for the chillies and garlic. Put brown sugar and honey in a bowl.
Add the brandy or rum to the bowl. You can also try using bourbon... Stir the marinade until the honey and sugar is dissolved.
Add the crushed garlic and Habaneros to the bowl. Stir until all parts are covered with marinade.
Let Habaneros and garlic marinate while you preheat your oven to 180-200 degrees centigrade.
Place the Habaneros and the garlic on a griddle. Keep the remaining marinade for later.
Place the griddle in the top drawer of your oven. Roast for 10-15 minutes until the garlic and chilis are nicely browned.
Put the remaining marinade to the apple vinegar. Add a teaspoon of salt.
Put the roasted Habaneros and garlic in blender.
Cover the roasted Habaneros and garlic in the blender with the apple vinegar.
Blend for 30-60 seconds until the garlic and Habaneros are finely chopped to the desired degree. Place mixture in a sauce pan and add a cinnamon stick.
Bring to boil and let simmer for 5-10 minutes.
Add the juice of a fresh lemon or lime.
Remove the glass bottle from the water bath. Fill the sauce in the glass bottle while both are hot. Leave the bottle upside-down until it has cooled down.
