Preheat the oven to 325 degrees
Score the ham on both sides
Stud the hame with whole cloves
In a pot over medium heat, stir the honey, corn syrup and maple syrup until the butter is melted
Brush the glaze over the ham. Set ham aside while we prep potatoes for oven.
Peel and chop the potatoes and spread them evenly in a small to medium sized baking pan.
Smother the potatoes in the olive oil and water
Spread the greek spice and onions evenly across the potatoes.
Use your hands to mix the potatoes together, ensuring every potato is covered.
Cover ham in tinfoil then place the potatoes and ham in the oven. Let cook for an hour and 15 minutes. Baste ham every 10-15 minutes.
Chop and peel the carrots
Add carrots to boiling water and let cook for 15 minutes or unit soft
Drain the water from the pot and add the honey, lemon and butter.
Cook carrots over medium heat in the glaze for 5 minutes, stirring often. Glaze should become a perfect consistency to coat the carrots and leave little to no liquid behind.
Cover the ham with the leftover glaze and serve with your vegetable sides.
