INGREDIENTS
Clean and half your strawberries. Weigh them, the sugar should be equal to this weight. You can slightly crush them with a fork but I chose not to to get a chunkier outcome. : )
In a suitable pan, add the berries and lemon juice bring to a boil. Stir to make the lemon juice extract water out of the berries.
Reduce heat when it starts to boil and simmer while stirring till berries are soft. 5-10 min depending on the quantity.
Add your sugar and stir using a wooden or plastic spoon.
Stir over low heat till it dissolves then increase heat to allow to boil. Make sure it's fully dissolved before boiling to avoid a grainy jam. When stirring check the back of the spoon has no granules
Boil for about 15min without stirring. If using less strawberries use less time to avoid the sugar from burning
Remove from heat and test if it's ready. Check next 2 steps
On a cold plate(put in the fridge in advance) pour the jam and allow to cool.
Using your finger, push gently and if the surface wrinkles, its ready. If not boil the jam for another minute or two.
When ready and away from heat, skim off the scum.
Transfer to a different container, and allow to cool.
You can also transfer the jam directly to waiting airtight jars
When storing, it should be in the airtight jars and on a cool dark place. After first use, refrigerate and you can actually use it up to a year after making it. Remember to label & date the jar.
